My 5 Favourite Dinner Recipes

My Lack Of Passion For Cooking

I’m not sure if this will come as a surprise to any of you but I actually don’t enjoy cooking. It is not something I look forward to doing everyday BUT I do it because I WANT to eat healthy and want to feed my family nutritional and healthy meals. I am not one of those people who find cooking therapeutic or use it as a form of self-care. The outcome is definitely a form of self-care but the process is tedious and not really enjoyable for me. However, I do it anyway.

Depending on what we have going on in any given week, I do not cook a home cooked meal every single night. I would say I cook approx 5-6 nights a week. We generally eat out once a week to eliminate a cooking night and to treat ourselves and the other nights we have leftovers or my husband and I have different meals depending on kids and work schedules. When I do cook meals, I love recipes that use minimal “crazy” ingredients, are loaded with veggies(if not, I add them) and are QUICK. Quick because I don’t love spending all night in the kitchen and quick because we are busy.

Here is a list of my 5 favourite dinner recipes:

  1. Spinach and Goat Cheese Hasselback Chicken. I usually add a side of sweet potatoes and roasted veggies for a super hearty meal!
  2. Southwestern Stuffed Zucchini Boats. I will generally serve these on their own or make a spinach salad as a side.
  3. Spaghetti Squash. This recipe is super simple. I will often add in turkey meatballs or ground turkey with marinara sauce and serve veggies as a side.
  4. Ground Turkey Sweet Potato Skillet. This is a super simple and delicious meal.
  5. One Pan Mexican Quinoa. This dish is super versatile. You can add or take away any ingredients you like!

I hope you can enjoy some or all of these delicious dishes! Happy cooking everyone! 🥘

XO Meg
