I’m not sure if this will come as a surprise to any of you but I actually don’t enjoy cooking. It is not something I look forward to doing everyday BUT I do it because I WANT to eat healthy and want to feed my family nutritional and healthy meals. I am not one of those people who find cooking therapeutic or use it as a form of self-care. The outcome is definitely a form of self-care but the process is tedious and not really enjoyable for me. However, I do it anyway.
Depending on what we have going on in any given week, I do not cook a home cooked meal every single night. I would say I cook approx 5-6 nights a week. We generally eat out once a week to eliminate a cooking night and to treat ourselves and the other nights we have leftovers or my husband and I have different meals depending on kids and work schedules. When I do cook meals, I love recipes that use minimal “crazy” ingredients, are loaded with veggies(if not, I add them) and are QUICK. Quick because I don’t love spending all night in the kitchen and quick because we are busy.
